Due to the destruction of the trestles wetlands and subsequent diesel spill, dead swamp rats have been washing up at San Onofre by the thousands. This man, only identified as Jose, demonstrates the finer techniques of rodent filet. Although he eats them raw, we recommend marinating them with a cajun spicy worcestershire sauce before simmering over a low flame while basting with a lighly seasoned hollandaise. Your results may vary.
